The canned sliced sour bamboo shoot products of Kim Boi joint Stock Company (Lac Thuy) are produced according to a closed process.

 

Recently, the company's 6 set of bamboo shoot products continued to be recognized by the Ministry of Industry and Trade and granted a certificate of the national typical rural industrial goods in 2023. Realizing the goal of enhancing the value of agricultural products, raising the level of Kim Boi bamboo brand, the company is making efforts to improve the designs and production technology to build bamboo shoots that meet the standard of 5-star OCOP in 2024. 

Kim Boi joint Stock Company was established in 2007, specializing in harvesting and producing all kinds of fresh bamboo shoots. The company purchases raw materials mainly in Kim Boi, Lac Thuy and Da Bac districts. After purchasing, bamboo shoots are processed and packaged in the factory according to Vietnamese clean food standards. Currently, Kim Boi bamboo shoot products are widely sold in domestic markets and are exported. 

In 2023, the company have 2 bamboo shoot products recognized as OCOP 4 stars at the provincial level: the instant dried bamboo shoots and sliced sour bamboo shoots. With the set plan, in 2024, the company continues to bring canned sliced sour bamboo shoot products towards OCOP 5-star standards. Accordingly, the company relies on the refrigeration principle of Muong people in Hoa Binh to produce sour bamboo shoots. From the planting and care process, it is ensured that no chemical fertilizers or pesticides are used. When the bamboo shoots reach a size of 30 - 40cm, it is the time for the best quality in both flavor and nutrient content. The bamboo shoots are harvested, peeled, washed, sliced and fermented. Produced under a closed process, sour bamboo shoots are stored at temperatures below 240C, surrounded by water to keep the fermentation level appropriate. During the fermentation and preservation process, the product absolutely does not use any chemicals, the finished product is crispy, sweet, and delicious sour bamboo shoots. 

Mr. Ngo Hoang Long, the Director in charge of production of Kim Boi joint Stock Company, says: Sliced sour bamboo shoots are a fermented food, providing fiber, rich in vitamins, supporting the digestive system, helping to prevent the risk of obesity, atherosclerosis and high blood pressure. The outstanding feature of sliced sour bamboo shoots is that they do not emit odor and have stable acidity. Sour bamboo shoot slices have a milky white color, chewy, crunchy, and sweet characteristics that are completely different from any other bamboo shoot products of the same type in the market. To upgrade the product to ensure 5-star OCOP standards, the company uses sterilized tin and zinc cans for preservation, helping the product retain its flavor and nutrition longer. The company uses modern technology to overcome all the limitations of the traditional method of producing pickled bamboo shoots, creating a product that is a cross between the past and present, full of flavor, completeness and convenience. 

Sliced sour bamboo shoot products can be used to prepare daily meals with different dishes including sour bamboo shoot soup with fish, sour bamboo shoot soup with chicken, sour bamboo shoot soup with pork bones, sour bamboo shoot soup with seafood… Besides, they are very suitable for cooling off when it is hot; Or just mixing a little sugar, roasted peanuts, fresh chili and herbs, we have a bamboo shoot salad without spending much time or effort. 

Kim Boi joint Stock Company's sliced sour bamboo shoot products have been granted ISO 22000-2018 certificate; the gold medal and the title of safe quality food for the public health; the typical rural industrial products of Hoa Binh province; Vietnamese high quality products for 5 consecutive years (2018 - 2022). The product meets the strict requirements to be present in major domestic supermarket systems such as Big C, Lotte, AEON, Winmart... and it is qualified for export to the Japanese, Dutch, German, Czech markets…
